Ingredients

  • 800 gr. of bondiola.
  • 1 kg of sweet potato puree.
  • 2 chopped carrots.
  • 1 chopped onion.
  • 10 cloves of garlic.
  • 200 ml. of vegetable broth.
  • 3 tbsp of mustard.
  • 500 ml. of dark beer.
  • 100 ml of heavy cream.
  • 2 tbsp of butter.
  • 1 small tablespoon of nutmeg.
  • 2 small spoons of honey.
  • 1 tbsp of sugar.
  • 4 tablespoons of grated cheese.
  • Herbs of your choice.

Instructions:

    Step 1
  • Make incisions to the bondiola and add in the same cloves of garlic and some herb, seal it in a pot on all sides, add the onion and carrot.
  • Step 2
  • Add beer and vegetable stock.
  • Step 3
  • Season with honey and pepper. Cover up.
  • Step 4
  • Cook at low temperature for a minimum of 2 hours. Once warm, crumble.
  • Step 5
  • Puree the sweet potato, seasoning with cream, butter, nutmeg, honey, salt and pepper.
  • Step 6
  • In a pre-oiled ovenproof dish, add the shredded meat down, top the puree and sprinkle with the sugar and grated cheese.
  • Step 7
  • Bake in the oven to gratin.
