Sprinkle the countertop with flour and prepare a homogeneous dough with butter, flour, 3 tablespoons of cold water and a pinch of salt and pepper. Cover it and let it sit for about an hour in a cool place.

Cut the ham and bacon into strips. Peel the onions and garlic, chop and sauté them. Mix them with the ham and bacon and salt and pepper.

Wash the chives and shake them well to dry. Chop it finely and add it to the preparation.

Heat the oven to 200°C (with air circulation on, to 180°C). Roll out the dough and line the bottom and the edge of a greased 24 cm removable mold with it. Spread the ham and bacon mixture on top.

Mix the eggs with the cheese, cream and milk and pour the cream into the mold. Then bake the quiche in the oven for about 50 minutes.
