Put the eggs together with the sugar in a bowl and beat until it has dissolved.

Add the oil, yogurt and zest and beat again until everything is well integrated.

Finally, sift the flour, together with the baking powder and a teaspoon of cinnamon powder (cinnamon is optional and can be added to taste). Mix until we have a homogeneous mass without lumps.

Preheat the oven to 180ºC with top and bottom heat. And while we line the mold where we are going to bake it.

Fill the mold with the dough and bake for about 35 minutes. Always be in the habit of puncturing the center of the cake with a toothpick to check that it comes out clean. Otherwise, extend baking for another 5-10 minutes and check again.

Once ready, let it cool on a rack and unmold it after 10-15 minutes to let it cool completely. If you like it you can sprinkle it with a little icing sugar.
