Ingredients

  • 4 eggs
  • 1 lemon yogurt
  • With the dimensions of the yogurt cup:
  • 1 cup mild olive oil or sunflower
  • 2 cups brown sugar or panela
  • 3 cups wholemeal spelt flour
  • 1 sachet of Royal type yeast
  • Zest of a lemon
  • Ground cinnamon to taste (optional)

Instructions:

    Step 1
  • Put the eggs together with the sugar in a bowl and beat until it has dissolved.
  • Step 2
  • Add the oil, yogurt and zest and beat again until everything is well integrated.
  • Step 3
  • Finally, sift the flour, together with the baking powder and a teaspoon of cinnamon powder (cinnamon is optional and can be added to taste). Mix until we have a homogeneous mass without lumps.
  • Step 4
  • Preheat the oven to 180ºC with top and bottom heat. And while we line the mold where we are going to bake it.
  • Step 5
  • Fill the mold with the dough and bake for about 35 minutes. Always be in the habit of puncturing the center of the cake with a toothpick to check that it comes out clean. Otherwise, extend baking for another 5-10 minutes and check again.
  • Step 6
  • Once ready, let it cool on a rack and unmold it after 10-15 minutes to let it cool completely. If you like it you can sprinkle it with a little icing sugar.
