Ingredients

  • 2 lbs (900g) chicken thighs and drumsticks
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 cup (240ml) soy sauce
  • 1 cup (240ml) white vinegar
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 1 teaspoon sugar
  • 1/2 cup (120ml) water
  • Cooking oil

Instructions:

    Step 1
  • In a large pot, heat a bit of cooking oil over medium-high heat. Add the chicken pieces and cook until they are lightly browned on all sides. Remove the chicken from the pot and set it aside.
  • Step 2
  • In the same pot, add a bit more oil if needed, then sauté the onions and garlic until they become fragrant and translucent.
  • Step 3
  • Return the browned chicken to the pot, and add the soy sauce, white vinegar, bay leaf, black peppercorns, and sugar. Stir to combine.
  • Step 4
  • Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 30-40 minutes or until the chicken is tender and fully cooked. Stir occasionally.
  • Step 5
  • Taste and adjust the seasoning if necessary. You can add more sugar or vinegar to suit your taste.
