  • 1.5 lbs chicken thighs, bone-in, skin-on
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 cup dried apricots, soaked in warm water
  • 1/4 cup blanched almonds
  • 1 cup chicken broth
  • Olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
