  • 2 small chicken breasts cut in half.
  • 1 onion cut in brunoise.
  • 2 crushed garlic cloves.
  • 1 tablespoon of vinegar
  • ½ tablespoon of Worcestershire sauce.
  • 2 sprigs of fresh thyme.
  • Salt and pepper.
  • 200 g of mushrooms.
  • 5 tablespoons of butter.
  • 2 tablespoons of oil.
  • 2 onions cut into rings.
  • 2 crushed garlic cloves.
  • 2 tablespoons of scallions cut into small pieces.
  • 1 sprig of parsley.
  • ½ tablespoon of lemon juice.
  • 1 cup of heavy cream.
  • Salt and pepper.

Instructions:

    Step 1
  • In a bowl, mix the onion in brunoise (it is a type of onion cut), the crushed garlic, the vinegar, the Worcestershire sauce and the thyme, season with salt and pepper to taste.
  • Step 2
  • Add the chicken breasts and set aside covered for 30 minutes.
  • Step 3
  • The oven is preheated to 400°F (200°C).
  • Step 4
  • The mushrooms are thoroughly cleaned and cut into slices.
  • Step 5
  • In a pan, place 2 tablespoons of butter, when it is melted, add the mushrooms and sauté until the liquid that is generated evaporates, removed from the heat and set aside.
  • Step 6
  • In a cauldron, place 2 tablespoons of oil and 3 tablespoons of butter, add the onions cut into rings and cook until golden brown; remove the onions and leave the oil in the cauldron.
  • Step 7
  • Add the garlic by cooking it until golden brown; add the remaining condiment in the chicken and bring it to a boil.
  • Step 8
  • In a glass baking tray, place the breasts and add the previous one, the onion, the chives, the parsley, the lemon juice and the peppercorns.
  • Step 9
  • The tray is covered with aluminum foil (the shiny part facing inside), baked for 30 minutes. Then the breasts are turned over and baked for 20 minutes.

  • The tray is taken out of the oven and the breasts are placed on the serving plate, the sauce that remains on the tray is transferred to a pot, then the excess fat is removed and brought to a boil, put on low heat and add the heavy cream, cook for 1 minute, stirring constantly.

  • Add the sauce to the breasts.
