Ingredients

  • 4 chicken leg quarters
  • 1/4 cup jerk seasoning (store-bought or homemade)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper (or habanero pepper), finely chopped
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground allspice
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons lime juice

Instructions:

    Step 1
  • In a bowl, combine jerk seasoning, vegetable oil, garlic, scotch bonnet pepper, green onions, soy sauce, brown sugar, allspice, thyme, salt, and pepper. Mix well.

  • Make shallow cuts in the chicken to allow the marinade to penetrate. Rub the jerk marinade all over the chicken pieces, making sure to get it into the cuts. Refrigerate and marinate for at least 30 minutes or longer for more flavor.

  • Preheat your grill to medium-high heat. Oil the grates to prevent sticking.
