    To prepare the sauce, chop the garlic cloves and parsley very finely, and put this together with the rest of the ingredients for the sauce in a bowl. We mix it very well and cover it with plastic wrap to put it in the fridge until ready for use.

    We will prepare the meat from the day before. First we fillet each breast into 3 fillets, if they are thick, into 4.

    In a bowl, mix 300 ml of Greek yogurt, the juice of a lemon, a teaspoon of each of cumin powder, smoked paprika, oregano, turmeric, white pepper, 1 clove of very minced garlic, 2 tablespoons of very chopped parsley... and a tablespoon of salt.

    When there is a homogeneous mixture, we submerge and thoroughly coat the breasts with the mixture and leave them like this for a minimum of 4 hours covered with a transparent film. I had them 24 hours.

    Preheat the oven at maximum power (200-250 degrees) for about 5 minutes, if you have more time you can leave it at 180 degrees for about 20-30 minutes, so that it is very hot before putting the meat in.

    Let's prepare the Doner!! To do this, we take an onion and peel it, we also cut it in half. We nailed the skewers one to each end of the onion, and left the part flat facing down (I don't have a picture of this so I drew a drawing until I prepared it again and put it on).

If your oven is very powerful, you can cover the meat with baking paper and aluminum, so that everything can be cooked inside as well.

    Now we prepare the filling, to do this we cut the lettuce into bite pieces, also the onion into thin slices and the finished tomato the same way. We also cut the pieces of cheese in half, in my case I put mozzarella because I couldn't find feta cheese!

    Take the meat out of the oven, put it straight in case it has moved 😅 and cut it with a very sharp knife so that they are like fine chips. Now we put another piece of Albal paper somewhere else and the tortilla on top. On top of this we place the lettuce, tomato, onion, meat, and cheese. Put three or four tablespoons of Kebab sauce.

    We close the Kebab first by folding at the ends and then rolling it from bottom to top so that it is a roll wrapped in Albal paper. Put a pan to heat up and cook the Kebab on top, first on one side for two minutes and when you turn it over another two minutes on the other side.
