Ingredients

  • 200g honey
  • 150g granulated sugar
  • 200g all-purpose flour
  • 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 200g candied peel (mixed)
  • 150g almonds, roughly chopped
  • 1/2 tsp baking powder
  • 1 lemon (zest)
  • 2 tbsp kirsch (cherry schnapps)
  • 200g dark chocolate (for glaze)

Instructions:

    Step 1
  • Preheat your oven to 200°C (392°F). Line a baking tray with parchment paper.
  • Step 2
  • In a saucepan, heat honey and sugar until dissolved. Remove from heat.
  • Step 3
  • In a separate bowl, sift flour, cinnamon, and cloves. Add candied peel, almonds, baking powder, and lemon zest.
  • Step 4
  • Pour the honey-sugar mixture over the dry ingredients. Add kirsch. Mix until a sticky dough forms.
  • Step 5
  • Press the dough onto the prepared tray, shaping it into a rectangle about 1cm thick.
  • Step 6
  • Bake for 20-25 minutes until golden. Remove from the oven, but keep the oven on.
  • Step 7
  • While still warm, cut the dough into small rectangles or diamonds.
  • Step 8
  • Return to the oven for a few more minutes to dry slightly.
  • Step 9
  • Once cooled, melt the chocolate and dip each piece halfway into the chocolate.
  • Step 10
  • Place on parchment paper to let the chocolate set.
