Ingredients

  • 300 g broccoli
  • 1 spring onion (can be sweet onion)
  • 2 cloves garlic
  • 1 carrot
  • 150 ml liquid cream for cooking
  • 350-400 ml poultry or vegetable broth
  • 50 g Manchego cheese
  • 50 ml extra virgin olive oil
  • Sal

Instructions:

    Step 1
  • Put the cheese in pieces in the glass of your food processor and chop it at speed 5-10 until it is sprinkled. (about 15 seconds). Book it.
  • Step 2
  • Wash the broccoli in water and vinegar, cut it into bunches and place it inside the varoma bowl (put the butterfly under the broccoli so that the steam is distributed evenly). Do not discard the trunk. Peel it and set it aside.
  • Step 3
  • Crush the garlic cloves by hand to make it easier to peel them and put them in the glass of your food processor. Place the varoma in its position and program 1 minute/varoma/speed 1. Add the onion in pieces and sauté 5 minutes/varoma/vel.1
  • Step 4
  • Add the diced carrot, the broccoli trunk in pieces, a little salt and sauté for 10 minutes/varoma/vel.1
  • Step 5
  • Remove the varoma from its position and add the broccoli bouquets to the glass (reserve several to decorate the plates). Add the broth and program 7 minutes/100°/reverse rot/vel.1. Add the liquid cream and cook for 3 more minutes. Grind 1 minute/speed 5-7-10, ensuring that at least the last 30 seconds are at maximum speed.
  • Step 6
  • Add the cheese, mix 5 seconds at speed 3. Plate the cream by placing a few bouquets of broccoli on top with a drizzle of virgin olive oil.
  • Step 7
  • Note: If you find it inconvenient to be removing and putting the varoma at each step, you can choose to make the broccoli first or do it in another container while you cook the rest.
