Ingredients

  • 1 1/2 cups of all-purpose flour
  • 1/2 cup of unsalted butter, cold and cubed
  • 1/4 cup of cold water
  • 1 cup of brown sugar
  • 1/2 cup of corn syrup
  • 1/4 cup of unsalted butter, melted
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1/2 cup of raisins (optional)

Instructions:

    Step 1
  • In a mixing bowl, combine the flour and cubed butter. Using a pastry cutter or your fingers, work the mixture until it resembles coarse crumbs.
  • Step 2
  • Add the cold water and mix until the dough comes together. Form it into a disk, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.
  • Step 3
  • Preheat your oven to 375°F (190°C) and grease a muffin tin.
  • Step 4
  • In a separate bowl, whisk together the brown sugar, corn syrup, melted butter, egg, and vanilla extract until smooth.
  • Step 5
  • Roll out the chilled dough on a floured surface and cut it into 12 circles to line the muffin tin.
  • Step 6
  • Place a few raisins (if using) in the bottom of each tart shell.
  • Step 7
  • Fill each tart shell with the sugar mixture until about 2/3 full.
  • Step 8
  • Bake for 15-20 minutes or until the tarts are set and the pastry is golden brown.
  • Step 9
  • Let them cool in the muffin tin for a few minutes, then transfer to a wire rack to cool completely.
