Ingredients

  • 200 g chocolate fondant for desserts (at least 50% cocoa)
  • 100 g cream
  • 4 eggs
  • 55 g sugar
  • A pinch of salt

Instructions:

    Step 1
  • Put the chopped chocolate, cream and sugar in a saucepan in a bain-marie and stir until it has melted.
  • Step 2
  • Separate the whites from the yolks. Add the yolks to the previous mixture and stir until integrated. Reserve.
  • Step 3
  • With the help of electric rods, assemble the egg whites to the point of firm snow with a pinch of salt.
  • Step 4
  • Finally, add the whipped egg whites to the chocolate mix, little by little and with enveloping movements. Once everything is well mixed, spread the preparation into cups or glasses and reserve in the fridge for at least 3 hours. Freshly made, it is more liquid, but with cold and rest it takes on body and the characteristic texture of mousse.

  • Keep in the fridge for up to three days.

  • To prepare with Thermomix: Add the chopped chocolate, cream and sugar and program 4 min/50ºC/vel 2.
  • Step 7
  • In the meantime, separate the yolks from the whites.
  • Step 8
  • Add the yolks and mix 15 sec/speed 4. Pour this mixture into a bowl and set aside. Rinse and dry the jar very well.
  • Step 9
  • Place the butterfly and put the egg whites inside along with a pinch of salt. Mount the whites 3 min/speed 3.5.
  • Step 10
  • Now you have to add the egg whites to the chocolate mixture little by little, mixing with the help of a spatula making enveloping movements from bottom to top.
  • Step 11
  • Once everything is well mixed, spread the mixture into cups or glasses and reserve in the fridge for at least 3 hours.
