200g (7 oz) of plain biscuits (e.g., malt biscuits)
120g (4 oz) of butter
1/2 cup sweetened condensed milk
150g (5 oz) of mixed lollies (e.g., fruit puffs or Eskimo lollies), chopped
1 cup desiccated coconut
Sprinkles (optional, for decoration)

Instructions:
Step 1
Crush the biscuits into small pieces, but not too fine.
Step 2
In a saucepan, melt the butter and sweetened condensed milk over low heat, stirring until well combined.
Step 3
Remove from heat and pour the butter mixture over the crushed biscuits. Mix until all biscuits are coated.
Step 4
Add the chopped lollies and desiccated coconut to the biscuit mixture. Stir until evenly distributed.
Step 5
Lay out a sheet of plastic wrap and transfer the mixture onto it.
Step 6
Shape the mixture into a log shape, about 25cm long, using the plastic wrap to help you roll and mold it.
Step 7
Roll the log in sprinkles if desired for a colorful finish.
Step 8
Wrap the log tightly in plastic wrap and refrigerate for at least 2-3 hours, or until it becomes firm.
Step 9
Once set, slice into rounds and serve. Enjoy your nostalgic New Zealand Lolly Cake!
