6 ripe plantains
1 cup cooked and sweetened black beans
1 teaspoon ground cinnamon
1/2 cup sugar
Vegetable oil for frying

Instructions:
Step 1
Peel the ripe plantains and cut them into chunks.
Step 2
Boil the plantain chunks in water until they are soft and tender, about 15-20 minutes.
Step 3
Drain the cooked plantains and mash them into a smooth consistency.
Step 4
While the mashed plantains are still warm, knead them with your hands to form a smooth dough.
Step 5
Take a small portion of the plantain dough and flatten it in your palm.
Step 6
Place a spoonful of sweetened black beans in the center of the flattened dough.
Step 7
Carefully fold the dough over the beans to encase them completely. Shape it into a smooth oval or ball.
Step 8
Heat vegetable oil in a deep frying pan over medium heat.
Step 9
Fry the stuffed plantain balls until they are golden brown and crispy on the outside, about 3-4 minutes per side.

Remove the rellenitos from the oil and drain on paper towels to remove excess oil.

While they are still warm, roll the rellenitos in a mixture of sugar and ground cinnamon to coat them evenly.

Serve the rellenitos de plátano as a sweet and satisfying dessert.
