Ingredients

  • For the dough
  • 250 gr. flour
  • 130 gr. sugar
  • 130 gr. butter in portions (at room temperature)
  • 2 eggs
  • A pinch of salt
  • For the filling
  • 500 g whole milk (I used soy milk)
  • 50 gr. flour
  • 100 gr. sugar
  • 2 eggs
  • 2 egg yolks
  • 1/2 tsp ground cinnamon
  • 250 gr. reineta apple without skin or seeds (1 apple and a half, approx.)
  • 40 g butter
  • For coverage
  • 2 reineta apples without skin or seeds
  • Lemon juice
  • 3 tsp sugar
  • 20 g butter
  • 150 gr. apricot jam (I used peach jam)

Instructions:

    Step 1
  • 1.- Mass:
  • Step 2
  • In the Thermomix glass we put the flour, sugar, butter, eggs and salt. We program 30 seconds, at speed 6. Remove from the glass and, with the back of a spoon, cover the bottom and walls of a 28 cm diameter removable mold. Let it rest in the refrigerator for 30 minutes.
  • Step 3
  • 2.- Filling:
  • Step 4
  • Without washing the glass, add the milk, flour, sugar, eggs, yolks and cinnamon. We program 7 minutes, temperature 90º and speed 4. Add the apple cut into quarters and then into slices. We program 3 minutes, temperature 90º, turn to the left and speed 2.
  • Step 5
  • Add the butter and program 30 seconds, turn to the left and speed 2. We finished mixing it well with the spatula.
  • Step 6
  • Preheat the oven to 180º.
  • Step 7
  • Coverage: Take the mold with the dough out of the refrigerator and pour the pastry cream over it. On top, place the apples cut into thin slices, decoratively and sprinkle them with half of the lemon juice. Sprinkle with sugar and spread the butter on top.
  • Step 8
  • Bake the cake for 40 minutes, at 180º. (depending on the oven we each have in our home) When we take it out of the oven, we paint it with the apricot jam mixed with the rest of the lemon juice.
