To Make the Base: 500 ml cups of pisco 250 ml cup of pika or lime lemon juice 250 ml cup of gum syrup To Serve: ½ egg white 6 ice cubes Droplets of bitter Angostura icing sugar, powdered or impalpable.

Put the base ingredients in a blender and process for 1 minute.

You can easily refrigerate the base mix until your guests arrive.

When you want to serve the pisco sour, just pour the base mixture into the blender, add the ice and egg white and blend for 30 seconds. Per person add 200 ml of the base.

Step 4
