Preheat your oven to 180°C (350°F).

Generously season the filet mignon with salt and pepper on both sides.

In a large ovenproof skillet, heat the olive oil over medium-high heat. Add the filet mignon and sear it on all sides, about 2 minutes per side.

Transfer the skillet to the preheated oven and roast the filet mignon for 15 to 20 minutes for medium-rare (or longer depending on your preference).

Meanwhile, in the same skillet, add the shallots and sauté them until they become tender.

Deglaze the skillet by pouring in the dry red wine and simmer until it reduces by half.

Add the beef broth and continue to cook until the sauce slightly thickens.

Stir in the butter to make the sauce velvety. Adjust the seasoning if needed.

Remove the filet mignon from the oven and let it rest for a few minutes before slicing it into thick pieces.

Serve the Chateaubriand with the shallot sauce on top, garnished with fresh parsley.
