Cut the onion into julienne strips and fry it with the minced garlic clove.

Once poached, add the finely cleaned and chopped spinach and let it drain all the water.

Add the ginger and season to taste. We reserved it in a colander.

We remove the thorn from the middle of the monkfish's tail so that the pieces remain. We salt and pepper.

Cut the puff pastry into rectangles so that it gives us something to wrap it up.

Put the monkfish on top of the puff pastry and a layer of spinach and onion on top. We wrap like a cannelloni leaving the sides free of dough.

Decorate with strips of puff pastry on top and paint with beaten egg.
