Ingredients

  • 1 courgette
  • 50 g wheat flour
  • 50 g rice semolina
  • Sal
  • Freshly ground black pepper
  • 50 ml sparkling mineral water (1 small bottle)
  • 100 ml frying oil
  • Yoghurt sauce

Instructions:

    Step 1
  • Wash the zucchini and cut it into thin slices, place them in a bowl and add 4 tablespoons of sparkling mineral water. Make sure that they are completely moistened.
  • Step 2
  • In another bowl, combine the flour and semolina, add salt and pepper. Mix well. Place the rest of the mineral water in a medium but deep bowl, you can use a glass if you prefer. With the help of a kitchen clamp, remove a slice from the water and pass it immediately through the flour mixture, press a little so that it adheres well and reserve it on a plate. In a small saucepan, heat the oil over high heat.
  • Step 3
  • When you are finished with the zucchini, immerse the slices one by one in the water and immediately fry them. At first it will jump a little but once you place several it will stop splashing.
