Instructions:
Step 1
Wash the zucchini and cut it into thin slices, place them in a bowl and add 4 tablespoons of sparkling mineral water. Make sure that they are completely moistened.
Step 2
In another bowl, combine the flour and semolina, add salt and pepper. Mix well. Place the rest of the mineral water in a medium but deep bowl, you can use a glass if you prefer. With the help of a kitchen clamp, remove a slice from the water and pass it immediately through the flour mixture, press a little so that it adheres well and reserve it on a plate. In a small saucepan, heat the oil over high heat.
Step 3
When you are finished with the zucchini, immerse the slices one by one in the water and immediately fry them. At first it will jump a little but once you place several it will stop splashing. When they are doren turn them over and leave them for another 1 minute. Remove and drain on absorbent paper. Wait for the oil to heat up a little and place another batch. Accompany the chips with the sauce you like the most, the yogurt that appears in the ingredients is great and also the Greek yogurt with lemon and tahini.
