  • 1 ripe apple
  • 1 tbsp lemon juice
  • 1 tsp cinnamon powder
  • 1 tsp grated ginger
  • 30 ml water

Instructions:

    Step 1
  • Wash fruits thoroughly. Cut the plums in half to remove the bone; then remove the core of the apple and grate it finely, leaving the skin.
  • Step 2
  • In a saucepan, place the apple, plum together with the lemon juice, cinnamon and ginger. Add the water to prevent the fruit from sticking to the bottom.

  • Simmer for 30 minutes, stirring occasionally with a spoon.

  • After this time, bring it to a high heat until it boils and let it reduce for 40 minutes. Remember not to stop stirring until the water evaporates and the pieces of fruit soften. When the jam looks thick and shiny, remove from the heat and let it cool for a couple of minutes.

  • If you like the texture to be smoother, you can process it with a hand blender. Watch out for splashes as the mixture will be hot.

  • Fill the jar that should be hot with the hot jam, leave 2 cm free. For safety use a mitten to grip the container while you screw the lid firmly and very quickly turn it over to form a vacuum. Leave it in this position for 7min. Store when the jam is tempered.

  • This jam can have approximately 4 months of shelf life if you keep it in a cool, dry place. After opening it you should store it in the fridge. As it has no sugar, its duration will be shorter.
