Ingredients

  • 2 pounds of beef (preferably chuck), cut into cubes
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 can of crushed tomatoes (14 oz)
  • 2 cups of beef broth
  • 2 carrots, cut into cubes
  • 1 red bell pepper, cut into cubes
  • 1 cup of peas
  • 3 potatoes, cut into cubes
  • 1 tablespoon of tomato paste
  • 2 bay leaves
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • Vegetable oil for cooking

Instructions:

    Step 1
  • Heat the vegetable oil in a large pot over medium-high heat.
  • Step 2
  • Add the beef and cook until golden brown on all sides.
  • Step 3
  • Add the onion and garlic and cook until golden brown.
  • Step 4
  • Add the crushed tomatoes, tomato paste, beef broth, bay leaves, oregano, salt and pepper to the pot and mix well.
  • Step 5
  • Bring the mixture to a boil, then lower the heat to medium-low and let it simmer for 20 minutes.
  • Step 6
  • Add the carrots, peppers, peas and potatoes to the pot and mix well.
  • Step 7
  • Cover and simmer for another 10 minutes or until vegetables are tender.
  • Step 8
  • Serve warm with cooked rice.
