  • 500g calf's liver, sliced
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/4 cup chicken or beef broth
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

    Step 1
  • Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the sliced onions and sauté until they become soft and golden brown, about 15 minutes. Remove the onions from the skillet and set them aside.
  • Step 2
  • In the same skillet, add the remaining butter. Season the calf's liver slices with salt and pepper. Sear the liver slices for 1-2 minutes per side until they are nicely browned but still pink inside. Remove the liver from the skillet and set it aside.
  • Step 3
  • Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Pour in the white wine and cook for a minute to deglaze the pan.

  • Return the caramelized onions to the skillet and stir them together with the garlic and wine.

  • Place the seared calf's liver slices on top of the onions. Pour in the chicken or beef broth and let it simmer for a few minutes to heat everything through and finish cooking the liver to your desired level of doneness.
