500g calf's liver, sliced 2 large onions, thinly sliced 2 tablespoons olive oil 2 tablespoons butter 2 cloves garlic, minced 1/4 cup dry white wine 1/4 cup chicken or beef broth Salt and black pepper to taste Fresh parsley, chopped (for garnish)

Step 1

Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the sliced onions and sauté until they become soft and golden brown, about 15 minutes. Remove the onions from the skillet and set them aside.
