Ingredients

  • 1 lb (450g) flank steak, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup Szechuan peppercorns
  • 2-3 dried red chilies, de-seeded and chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/4 cup scallions, chopped
  • 1/4 cup peanuts (optional)
  • Steamed rice for serving

Instructions:

    Step 1
  • Heat a wok or large skillet over high heat. Add the vegetable oil and let it heat until it shimmers.
  • Step 2
  • Add the Szechuan peppercorns and dried red chilies. Stir-fry for about 30 seconds until fragrant. Remove and discard any excess peppercorns.
  • Step 3
  • Add the sliced beef and stir-fry for 2-3 minutes or until it's no longer pink. Remove the beef from the wok and set it aside.
  • Step 4
  • In the same wok, add the minced garlic and ginger. Stir-fry for about 30 seconds.
  • Step 5
  • Return the cooked beef to the wok, and add soy sauce, hoisin sauce, rice vinegar, and sugar. Stir-fry for another 2-3 minutes until the beef is evenly coated with the sauce.
  • Step 6
  • Add the chopped scallions and peanuts (if using), and stir-fry for an additional minute.
  • Step 7
