  • 1.5 pounds (700g) of beef stew meat, cubed
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 4 potatoes, peeled and diced
  • 2 cups beef broth
  • 1 cup Guinness Stout (optional)
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

    Step 1
  • Heat the vegetable oil in a large, heavy pot over medium-high heat.

  • Add the beef cubes and brown them on all sides. Remove the beef and set it aside.
