Ingredients

  • 500g chicken or lamb, cut into pieces
  • 2 cups long-grain Basmati rice
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, chopped
  • 2 carrots, diced
  • 1 red bell pepper, chopped
  • 2 tablespoons Kabsa spice mix (a blend of coriander, cumin, cinnamon, cloves, and cardamom)
  • 2 tablespoons vegetable oil
  • 4 cups chicken or beef broth
  • Salt and pepper to taste
  • 1/4 cup raisins (optional, for garnish)
  • 1/4 cup slivered almonds (optional, for garnish)
  • Fresh cilantro or parsley for garnish

Instructions:

    Step 1
  • In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent.
  • Step 2
  • Add the chicken or lamb pieces and brown them on all sides. Stir in the Kabsa spice mix and continue to sauté for a few more minutes.
  • Step 3
  • Add the chopped tomatoes, carrots, and red bell pepper. Cook for about 5 minutes until the vegetables start to soften.
  • Step 4
  • Rinse the Basmati rice under cold water until the water runs clear. Add the rice to the pot and stir to combine with the other ingredients.
  • Step 5
  • Pour in the chicken or beef broth, and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the rice is cooked and the meat is tender.
  • Step 6
  • While the Kabsa is cooking, you can prepare the optional garnishes. In a separate pan, lightly toast the slivered almonds until they turn golden, and plump up the raisins by soaking them in hot water.
  • Step 7
  • Once the Kabsa is ready, fluff the rice with a fork and transfer it to a serving platter. Top with the toasted almonds, plumped raisins, and fresh cilantro or parsley.
