Ingredients

  • 1.5 lbs (700g) lamb stew meat, cubed
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 1/2 cup dried apricots
  • 1/2 cup dried figs, halved
  • 1/4 cup slivered almonds
  • 2 cups chicken broth
  • 2 tablespoons honey
  • Fresh cilantro leaves for garnish

Instructions:

    Step 1
  • Heat the olive oil in a tagine or large, heavy-bottomed pot over medium heat.
  • Step 2
  • Add the finely chopped onion and minced garlic, and sauté until they become translucent.

  • Add the cubed lamb and brown it on all sides.
  • Step 4
  • Stir in the ground cumin, ground coriander, ground cinnamon, paprika, and ground ginger. Cook for a few minutes to release their flavors.

  • Season with salt and pepper to taste.

  • Add the dried apricots, halved dried figs, and slivered almonds, and stir to combine.
