Ingredients

  • 700 g of lamb criadillas.
  • 200 g of thinly sliced bacon.
  • 500 g of fresh noodles.
  • 4 branches of chives or onions in branches.
  • 1 red pepper cut into julienne strips.
  • 2 chilli peppers.
  • 80 g of wheat flour.
  • 100 ml of oil.
  • 4 crushed garlic cloves.
  • 70 ml of sweet chili sauce.
  • 1 tablespoon of Worcestershire sauce
  • 100 ml of meat broth.
  • 1 tablespoon of sesame oil.
  • Salt and pepper to taste.

Instructions:

  • Cut the chillies and scallions lengthwise.
  • Step 2
  • Wash the lamb criadillas and remove the membrane.
  • Step 3
  • Immerse them in cold water for 30 minutes; after the time has passed, remove them from the water and dry them with absorbent paper.

  • Cut them into thin slices.

  • In a large pot, heat the water and a teaspoon of salt; when it is boiling, add the noodles.

  • Mix the criadillas and the noodles, add them to the pan with the rest of the ingredients; sauté while stirring until the sauce starts to boil, add salt and pepper to taste.

  • Remove from heat.

  • Serve the noodles with criadillas and add the crispy bacon on top.
