  • 1.5 kg (3.3 lbs) rabbit, cut into pieces
  • 2 tbsp olive oil
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 250 ml (1 cup) dry white wine
  • 250 ml (1 cup) chicken broth
  • 3 tbsp Dijon mustard
  • 250 ml (1 cup) heavy cream
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions:

    Step 1
  • In a large skillet, heat olive oil over medium heat.
  • Step 2
  • Add rabbit pieces and brown on all sides. Remove and set aside.

  • In the same skillet, add onions and garlic. Sauté until softened.

  • Pour in white wine and simmer until reduced by half.

  • Return rabbit to the skillet and stir in mustard and chicken broth. Season with salt and pepper.
