Recipe of Pastel de Tres Leches

    Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.

    In a bowl, sift together the flour, baking powder, and salt.

    Separate the egg yolks from the whites. In a separate bowl, beat the egg yolks with 3/4 cup of sugar until light and fluffy. Stir in the 1/3 cup of milk and 1 teaspoon of vanilla extract.

    Gradually add the flour mixture to the egg yolk mixture, mixing until smooth.

    In a clean, dry bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup of sugar and continue to beat until stiff peaks form.

    Gently fold the egg white mixture into the batter until well combined.

    Pour the batter into the prepared baking dish and smooth the top.

    Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

    While the cake is baking, prepare the three-milk mixture by combining the sweetened condensed milk, evaporated milk, whole milk, and 1 teaspoon of vanilla extract in a bowl. Mix well.

    Once the cake is done, remove it from the oven and allow it to cool slightly.

    While the cake is still warm, poke holes all over the surface using a fork or toothpick.

    Slowly pour the three-milk mixture over the cake, allowing it to soak in. Cover and refrigerate for at least 4 hours or overnight.
