Instructions:
Step 1
First of all, we wash the peppers. Medium-sized peppers. We give them a horizontal cut at the top, creating a kind of lid. And we freed them from seeds.
Step 2
Chop the onion and the white part of the leek.
Step 3
We grate the carrot.
Step 4
In a frying pan, with a little olive oil, sauté the vegetables over medium heat.
Step 5
In a small pot we cook the rice, we will need 300 g of rice already cooked.
Step 6
In a bowl, mix the minced beef with rice and poached vegetables. Add salt and pepper to taste, and chopped parsley. We mix.
Step 7
Fill the peppers, without going over the edge. We covered it with the upper part that we had cut.
Step 8
In a large pot, add crushed tomato, salt it to taste and place the stuffed peppers, with lids on top, add the water, black peppercorns, bay leaves, half an onion, a piece of leek, an Italian green pepper cut into pieces, to give more flavor to the sauce.
Step 9
Cover the pot and cook the peppers for 40 minutes.
Step 10
You can grind the sauce with the vegetables that were inside, removing the bay leaves, but this step is optional.
Step 11
Serve the peppers on a plate and serve with the sauce and a little fresh cream or natural Greek yogurt.
