500g boneless pork, cubed
2 onions, finely chopped
4 cloves garlic, minced
1-inch piece of ginger, grated
2-3 green chilies, chopped
1/2 cup white vinegar
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon turmeric powder
2 teaspoons red chili powder
1 teaspoon garam masala
Salt to taste
Fresh cilantro for garnish

Instructions:
Step 1
Marinate pork in vinegar, ginger, garlic, green chilies, and salt for 30 minutes.
Step 2
Heat oil in a pan, add cumin and mustard seeds. Let them splutter.
Step 3
Add chopped onions and sauté until golden brown.
Step 4
Stir in turmeric, red chili powder, and garam masala. Cook for 2 minutes.
Step 5
Add marinated pork and cook until it turns brown.
Step 6
Pour in the marinade and simmer for 15-20 minutes.
