To begin with, we clean our ribs thoroughly and let it dry. If you prefer, you can cut the ribs now and bake them like this, but I like to do it whole and separate them later, they will be more juicy. We are already preheating the oven to 200ºC while we prepare the rest of the ingredients.

Cut the potatoes not too thick, place them on the baking tray and paint them with olive oil along with the ribs. We salt and pepper. Then we add the white wine and add the thyme to our liking. It has almost the same ingredients as when we make a roasted leg of lamb. Let it bake for about 45 minutes, until we see that it is golden and crispy enough. And ready to serve. Bon Appetit.
