  • 1 whole turkey (12-14 pounds)
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 tablespoons fresh sage, finely chopped
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • Salt and pepper to taste
  • 1 large onion, chopped
  • 4 stalks celery, chopped
  • 2 carrots, chopped
  • 4 cups cubed stale bread
  • 1 cup chicken or turkey broth
  • 1 teaspoon poultry seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper

Instructions:

    Step 1
  • Preheat your oven to 325°F (165°C).
  • Step 2
  • In a bowl, mix together the softened butter, chopped sage, rosemary, thyme, and season with salt and pepper. This will be the herb butter for the turkey.
  • Step 3
  • Remove the giblets and neck from the turkey, and pat it dry with paper towels.
  • Step 4
  • Carefully separate the skin from the turkey breast and legs, being gentle to not tear the skin.
  • Step 5
  • Spread the herb butter under the skin, making sure to coat the turkey meat evenly. Season the outside of the turkey with more salt and pepper.
  • Step 6
  • In a large roasting pan, place the chopped onion, celery, and carrots. Set the turkey on top of the vegetables.
  • Step 7
  • In a separate bowl, combine the cubed stale bread, poultry seasoning, garlic powder, onion powder, and black pepper. Mix well.
  • Step 8
  • Stuff the turkey cavity with the bread mixture, and truss the legs together with kitchen twine.
  • Step 9
  • Pour the chicken or turkey broth into the bottom of the roasting pan.
  • Step 10
  • Cover the turkey with aluminum foil and roast in the preheated oven for about 3.5 to 4 hours, basting every 30 minutes with the pan juices.

  • Remove the foil during the last 30 minutes of roasting to allow the skin to brown.

  • The turkey is done when a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C). Make sure the stuffing reaches the same temperature.

  • Once done, remove the turkey from the oven and let it rest for about 30 minutes before carving.
