Ingredients

  • 1 lb (450g) boneless lamb or beef, cut into cubes
  • 2 large onions, finely sliced
  • 2 tomatoes, chopped
  • 3-4 tablespoons cooking oil
  • 2 teaspoons ginger-garlic paste
  • 1/2 cup plain yogurt
  • 2 teaspoons red chili powder (adjust to taste)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 4-5 green cardamom pods
  • 4-5 cloves
  • 2 bay leaves
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

    Step 1
  • Heat oil in a heavy-bottomed pan. Add the sliced onions and cook until they turn golden brown. Remove half of the onions and set them aside for garnishing.
  • Step 2
  • Add the ginger-garlic paste and cook for a couple of minutes until the raw aroma disappears.
  • Step 3
  • Add the meat cubes and brown them on all sides.
  • Step 4
  • Stir in the chopped tomatoes and cook until they turn soft and the oil starts to separate from the mixture.
  • Step 5
  • Add the red chili powder, ground coriander, ground cumin, ground cinnamon, green cardamom pods, cloves, bay leaves, and salt. Cook for a few minutes to roast the spices.
  • Step 6
  • Beat the plain yogurt and gradually add it to the pan, stirring constantly to prevent curdling.
  • Step 7
  • Add water, cover, and simmer for about 30-40 minutes until the meat is tender and the oil rises to the surface.
  • Step 8
  • Garnish with the reserved fried onions and fresh cilantro.
  • Step 9
