Ingredients

  • 4 large slices of beef (such as roastbeef or tenderloin), thin and tender
  • 4 tablespoons of mustard
  • 4 slices of bacon
  • 1 large onion, sliced
  • 4 pickled gherkins, long slices
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 sprig thyme
  • 2 tablespoons flour (optional, to thicken the sauce)

Instructions:

    Step 1
  • Spread beef slices on a cutting board and season with salt and pepper.
  • Step 2
  • Spread a layer of mustard on each slice of beef.
  • Step 3
  • Place a slice of bacon, onion slices and pickle slices in the center of each slice of beef.
  • Step 4
  • Roll up the slices of meat, making sure the filling is well sealed inside.

  • Heat the vegetable oil in a large pot over medium-high heat.
  • Step 6
  • Brown the beef rolls on all sides until well seared.
  • Step 7
  • Add the beef stock, red wine, bay leaves and thyme to the pot.
  • Step 8
  • Reduce the heat to low, cover the pot and simmer for about 2 hours or until the meat is tender.
  • Step 9
  • If you want a thicker sauce, you can remove the meat rolls from the pot, add the flour to the cooking liquid and cook over medium heat until the sauce thickens.
  • Step 10
  • Remove the bay leaves and thyme from the sauce. Taste and adjust seasoning with salt and pepper as needed.
  • Step 11
  • Serve the Rouladen hot with the sauce on top, accompanied by mashed potatoes or Knödel (potato dumplings) and sauerkraut.
