    Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.

    In a mixing bowl, combine the flour, sugar, mixed spice, and ground ginger.

    Add the cold, cubed butter to the dry ingredients. Use your fingertips to rub the butter into the flour mixture until it resembles breadcrumbs.

    In a small bowl, whisk the egg yolk and 2 tablespoons of milk together.

    Pour the egg yolk mixture into the dry ingredients and mix until a dough forms. If the dough is too dry, add the remaining milk.

    Roll the dough out on a floured surface to about 1/4-inch thickness. Use a round cookie cutter to cut out 12 circles.

    Place the circles on the prepared baking sheet and decorate each with a small piece of candied peel in the center.
