We asked the butcher to open the sirloin for us. Put it on the oven tray and season with salt and pepper on both sides.

We make a very thin French tortilla and set the oven to preheat, heat up and down at 200ºC.

We are filling the sirloin, first we place the tortilla, then bacon and finally the cheese.

We roll up the sirloin, first sticking the ends inward, otherwise, the cheese will all come out, this way it will come out less. It's ready to be put in the oven, but first we spread it with a little olive oil.

While the sirloin is being made, we prepare a sauce, I made it by poaching the vegetables.

When they are well poached, I have added a splash of white wine, evaporate the alcohol and then the broth.

When the sauce is ready, we grind it.

After about 35-40 minutes, depending on the oven, we let the sirloin warm up a little so that we can cut it into medallions and serve with a little sauce on top.
