Ingredients

  • 3 artichokes.
  • 75 ml of lemon juice.
  • 150 g of breadcrumbs.
  • 6 crushed garlic cloves
  • 150 g of breadcrumbs.
  • 1 tablespoon of lemon zest.
  • 90 ml of peanut oil.
  • 80 g of natural peanuts.
  • 500 g of noodles.
  • 2 liters of water.
  • 1 large red onion cut into feathers.
  • 2 chilli peppers.
  • 120 g of pitted black olives.
  • 2 tablespoons of oyster sauce.
  • 70 ml of vegetable broth.
  • Salt and pepper to taste.

Instructions:

    Step 1
  • Cut the stems of the artichokes and remove the outer leaves and then, with the help of a spoon, remove the hard central part.
  • Step 2
  • In a medium pot, heat water and add the lemon juice when it starts to boil, then add the uncovered artichokes, boil for approximately 30 minutes or until soft.
  • Step 3
  • Remove them from the heat, drain them and cut them into 4 parts.

  • In a small cup, mix the breadcrumbs with the garlic and lemon zest.
  • Step 5
  • In a pot, add the 2 liters of water and 1 tablespoon of salt, heat to a boil and then add the noodles; remove from the heat when they are al dente, drain the water completely and set aside.

  • In a cauldron, heat half of the oil and sauté the peanuts until slightly golden brown.
  • Step 7
  • Drain it and place it on absorbent paper.

  • In the same cauldron, sauté the breadcrumbs and garlic mixture until lightly browned.
  • Step 9
  • Add the noodles and sauté until heated; remove the noodles from the kettle and keep them covered to keep warm.

  • In the same pot, add the remaining oil and heat; sauté the artichokes and onion, the chilli pepper and finally the olives.
  • Step 11
  • Cook until the onion is lightly browned.
  • Step 12
  • Add the oyster sauce and vegetable broth to the previous one; stir until the sauce starts to boil, add salt and pepper to taste.
  • Step 13
  • Serve the noodles accompanied by the sauce and peanuts.
