90 g ramen-type noodle (or whichever you prefer: noodles, udon, rice noodles...)
1 salmon loin
1 red bell pepper
1 green pepper
1 garlic
8-9 mushrooms
1/2 small broccoli
2 pear tomatoes
1 tbsp red curry paste
500-600 ml fish broth (depending on what you want, more or less liquid). I used 550), you could also use broth pills
125 ml coconut milk
A splash of lime (it could also be lemon)
Spices
A teaspoon of ginger or a piece of natural
1 teaspoon curry
1 touch black pepper
1 tsp lemongrass
1 tbsp chopped cilantro
1 touch chopped chili *optional
Salt and olive oil

Instructions:
Step 1
Cut the peppers into julienne strips. We will take them to our pot, with a teaspoon of olive oil and we will begin to brown them. Add the minced garlic once they start to turn color
Step 2
Once they have picked up the little color, add the diced tomato and let it all fry together for about 5-7 minutes. Add a pinch of salt.
Step 3
Cut the mushrooms and add to continue sautéing for about 3-5 more minutes
Step 4
We will add the fish stock. Bring to the boil and keep for another 5 minutes, adding the spices (minus the coriander), the lime juice and the red curry paste. Meanwhile... cut the broccoli into small trees and add it to let it cook for 5 more minutes.
Step 5
Add the noodles and the salmon in pieces, leave for a couple of minutes (in this case we will let them cook with the residual heat) and turn off the heat. Let it rest for 5 minutes and the salmon will have been cooked for us.
Step 6
Once it has rested, we will plate it by adding the chopped coriander and that's it!!
