Boil a large pot of salted water. Plunge the live lobsters into the boiling water for 3 minutes. Remove them and let them cool.

Cut the lobsters into pieces, removing the meat from the claws and tails. Set aside the meat and lobster carcasses.

In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion and garlic, then sauté until they become tender.

Add the flour and stir to make a roux. Incorporate the cognac and simmer until the mixture thickens slightly.

Add the lobster or fish broth, the reserved lobster carcasses, paprika, salt, and pepper. Simmer for 30 minutes.

Strain the mixture through a fine sieve to obtain a smooth broth. Discard the carcasses.

In another pot, melt the remaining 2 tablespoons of butter. Add the lobster meat and briefly cook.

Incorporate the lobster broth, then reduce the heat and let it simmer for 5 minutes.

Add the heavy cream and heat without boiling. Adjust the seasoning according to your preferences.
