Ingredients

  • 2 cups of wholemeal flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of coconut oil
  • 1/2 cup of brown sugar
  • 2 eggs
  • 1 teaspoon of vanilla essence
  • 2 grated carrots
  • 1/2 cup of orange juice
  • 1 teaspoon of orange zest

Instructions:

    Step 1
  • Preheat the oven to 180°C and grease a pudding pan.
  • Step 2
  • In a large bowl, sift together whole wheat flour, baking powder and salt.
  • Step 3
  • In another bowl, whisk the coconut oil with the brown sugar until smooth. Add the eggs and vanilla extract and mix well.
  • Step 4
  • Add the flour mixture to the egg mixture and mix well. Add the grated carrots, orange juice and orange zest and mix until you get a homogeneous mass.

  • Pour the dough into the pudding pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
