    Put a clay pot with the oil on the fire. When the oil is hot, add the peeled and chopped onion and the whole garlic head. Saute for about 10 minutes over low heat until the onion and garlic are golden brown. Then remove the garlic head and set aside.

    Along with the onion, add the bacon and the sliced sausages, sauté until golden brown.

    After a few minutes, add the pre-grated tomatoes and raise the heat. Cook until the tomato is ready and add the paprika, a little pepper and salt to taste.

    Add the rice and half of the vegetable stock, and cook on the fire for about six minutes. Then add the cooked chickpeas (drained) and the drained raisins. Place the garlic head in the center of the pot and bake for 12 minutes, adding the remaining hot broth little by little.
