  • 2 eggs
  • 2 cups bean sprouts
  • 3 green onions, chopped
  • 1/4 cup crushed peanuts
  • Lime wedges for garnish
  • For the Pad Thai Sauce:
  • 3 tablespoons tamarind paste
  • 2 tablespoons fish sauce (or soy sauce for a vegetarian option)
  • 2 tablespoons sugar
  • 1/2 teaspoon chili flakes (adjust to taste)

Instructions:

    Step 1
  • Prepare Noodles: Soak the rice noodles in warm water for about 20 minutes or until they are pliable but still firm. Drain and set aside.
  • Step 2
  • Make Pad Thai Sauce: In a small bowl, mix together tamarind paste, fish sauce (or soy sauce), sugar, and chili flakes. Adjust the flavors to your liking, adding more sugar for sweetness or more chili for heat.

  • Cook Protein: In a large wok or skillet, heat the vegetable oil over medium-high heat. Add minced garlic and your choice of protein (shrimp, chicken, or tofu). Cook until the protein is no longer pink and shrimp turns pink and opaque, about 3-4 minutes.

  • Add Eggs: Push the cooked protein to one side of the pan. Crack the eggs into the other side and scramble them until they're nearly set.

  • Combine Ingredients: Add the drained rice noodles to the pan, followed by the prepared Pad Thai sauce. Use tongs to toss everything together until the noodles are evenly coated with the sauce.
