Instructions:
Step 1
Melt the butter in the steamer and add the olive oil as well. Add the chopped onion and garlic and a pinch of salt, cook at low temperature for 5 minutes in the microwave. We stopped halfway through cooking to stir.
Step 2
In the meantime, prepare the spice mix with a tablespoon of each: Cardamom, cloves, cinnamon and whole cumin. When the onion is poached, add the spices, stir and put another minute at a low temperature.
Step 3
Add the rice, stir and reheat it in the microwave for a minute to cook the rice.
Step 4
Add the coconut milk (we could replace it with water or chicken broth, but the coconut gives it a touch) and a spoonful of chopped chives. Microwave for 10 minutes at 800W.
Step 5
In the meantime, we chop some almonds and a bunch of coriander. We add it to the rice along with a handful of raisins. Stir and put another minute in the microwave.
Step 6
Enjoy it hot with your favorite Indian dishes.

I accompanied it with a very rich chicken curry with butter.

Best of all: it can be frozen! We put it in a tupper without squeezing it and with the minimum amount of air, we add a splash of olive oil to impregnate it and to the freezer. We defrost it slowly and heat it up just before eating.
