Ingredients

  • 2 cups of rice
  • 350 gr. prawns
  • 1/2 onion
  • 1 clove of garlic
  • 2 tbsp. olive oil
  • 4 cups of hot water to cook the shrimp shells
  • saffron
  • 1 sprig of parsley
  • 1 glass of cognac
  • 250 gr. of peas
  • salt

Instructions:

    Step 1
  • Clean the prawns thoroughly, reserve the tails and use the shells and heads to make a broth with water and salt.
  • Step 2
  • Peel the onion and chop it finely.
  • Step 3
  • Crush the garlic, the parsley branch, previously washed, and a few slices of saffron in a mortar. Book.
  • Step 4
  • In a pan with hot oil, sauté the onion carefully so that it does not burn, add the shelled peas and prawns and sauté all the ingredients. Add a glass of cognac and wait for the alcohol to evaporate.
  • Step 5
  • Add the hot cooking water, the pre-measured shrimp shells, the rice and the contents of the mortar. Check the salt point and let it boil for about 20 minutes.
  • Step 6
  • Remove the pan from the heat when the time indicated is up and let it rest for about 5 minutes.
