Ingredients

  • 200g firm tofu, cubed and fried
  • 2 cups bean sprouts
  • 2 cups cabbage, shredded
  • 2 boiled potatoes, sliced
  • 4 hard-boiled eggs, quartered
  • 2 cucumbers, sliced
  • 4 Kaffir lime leaves, finely shredded (optional)
  • 1/4 cup fried shallots (optional)
  • 1/2 cup prawn crackers (optional)
  • For the Peanut Sauce:
  • 1 cup roasted peanuts, finely ground
  • 2 cloves garlic, minced
  • 2 red chili peppers, chopped
  • 2 tablespoons tamarind paste
  • 2 tablespoons palm sugar (or brown sugar)
  • 1 cup coconut milk
  • Salt to taste

Instructions:

  • Prepare the Peanut Sauce:

  • In a blender, combine the ground peanuts, garlic, red chili peppers, tamarind paste, palm sugar, and a pinch of salt.

  • Gradually add the coconut milk while blending until you achieve a smooth and creamy sauce. Adjust the consistency with more coconut milk or water if needed. Set the sauce aside.

  • On a serving platter, arrange the fried tofu, bean sprouts, shredded cabbage, sliced potatoes, quartered hard-boiled eggs, and cucumber slices.
