Put the rice to cook. In the meantime, cut the tofu into cubes and wash the chickpeas.

Saute the tofu and chickpeas until toasted.

Cut the avocado, mango and cucumber into equal pieces. Book.

Once the rice is done, let it warm for a few minutes. Serve on a plate and place the pieces of mango, avocado, cucumber and toasted tofu and chickpeas on top. Add the orange and lemon juice. Finish by putting some coriander (or peppermint) leaves on top along with a drizzle of olive oil.
