  • 1 cup bulgur wheat, soaked in hot water
  • 1 cup fresh parsley, chopped
  • 1/2 cup mint leaves, chopped
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Salt and pepper to taste
