1 cup bulgur wheat, soaked in hot water
1 cup fresh parsley, chopped
1/2 cup mint leaves, chopped
2 tomatoes, diced
1 cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup olive oil
1/4 cup lemon juice
Salt and pepper to taste
