    Peel, core, and slice the apples into quarters. Toss them with lemon zest and set aside.

    In a 9-inch ovenproof skillet or Tatin dish, melt the butter over medium heat. Add the sugar and a pinch of salt. Stir occasionally until the sugar starts to caramelize and turn golden brown. This may take about 10 minutes.

    Once the caramel reaches the desired color, remove it from the heat and add the vanilla extract. Be cautious as it may splatter. Stir quickly to combine.

    Arrange the apple quarters in a circular pattern in the skillet, fitting them closely together. Place any extra apple slices in the center.

    Roll out the puff pastry sheet to fit over the apples and tuck the edges down around the apples inside the skillet.

    Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until the pastry is golden brown and crispy.
