250g dried salted codfish
500g potatoes, peeled and diced
1 onion, finely chopped
2 cloves garlic, minced
2 eggs
2 tbsp fresh parsley, chopped
Salt and pepper to taste
Vegetable oil for frying

Instructions:
Step 1
Soak codfish in cold water for 24 hours, changing the water several times to desalt. Drain and shred finely.
Step 2
Boil potatoes until tender, then mash.
Step 3
In a pan, sauté onions and garlic until golden. Add shredded codfish and cook briefly.
Step 4
Combine codfish, mashed potatoes, eggs, parsley, salt, and pepper in a bowl.
Step 5
Mix until you have a firm dough. Shape into small oval cakes.
Step 6
Heat oil in a deep pan. Fry cakes until golden brown, about 3 minutes each side.
Step 7
Drain on paper towels. Serve Bolinhos de Bacalhau hot with a side of aioli or hot sauce. Enjoy!
